201 vs 304 Stainless Steel: What's Really in Your Bottle

Flip over a cheap steel bottle and you'll find one of a few things stamped on the base: "18/8", "SUS 304", "food grade" — or, tellingly, nothing at all about the steel. The grade is one of the few genuinely meaningful numbers on the whole spec sheet, and also one of the easiest for a brand to stay quiet about, because the two common grades look identical on a shelf and most buyers have never been given a reason to care.
Here's the reason to care.
The two grades you'll actually meet
304 — usually written 18/8 (around 18% chromium, 8% nickel) — is the food-grade standard for anything holding a drink. The nickel is the whole point: it's what makes the steel properly corrosion-resistant and non-reactive, so it won't take on a metallic taste, won't react with acidic or salty drinks, and survives years of washing.
201 is a cheaper steel that swaps much of that expensive nickel for manganese. It isn't evil — it's used safely in plenty of applications, and dry or short-term it's perfectly fine. But it's measurably less corrosion-resistant, and a water bottle is close to its worst case: liquid, often acidic, washed constantly, sometimes left full overnight. Over months, 201 is the one more likely to pit, pick up a faint metallic edge, or spot with rust around the seams.
Where the grade actually matters
The part that touches your drink. Plenty of bottles — including good ones — use a 304 inner wall for everything the liquid meets and a cheaper steel on the outer shell to save cost, which is a perfectly sensible bit of engineering. What you don't want is 201 on the inside, against acidic drinks, for years. So the question isn't simply "is it steel" — it's "what grade is the wall my drink actually touches."
How to tell what you're buying
Read the bottle and the listing. A brand using 304 tends to say so, plainly, because it costs more and they'd like the credit. Vagueness — "premium stainless steel", "high-grade alloy", or simple silence on the number — is usually a small tell. "Stainless steel" on its own is a category, not a grade. And ignore the magnet test you'll read about online: both grades can be slightly magnetic depending on how they're worked, so it proves nothing. The stated number is what counts.
